Crunchy Apple Rings and Fruit Kabobs with Dipping Yogurt

Crunchy Apple Rings

  Crunchy Apple Rings
2 Apples
4 T Old fashioned, reduced fat peanut butter
½ C Granola

Directions:
Wash apples. With a knife or apple corer, remove apple core. Slice into rings about ¼ inch thick so that the apple slices have a hole in the middle. Spread with peanut butter on one side of apple ring. Place on plate and sprinkle with your choice of cereal.

 Fruit Kabobs with Dipping Yogurt 

1 C Low-fat or non-fat sugar free yogurt
¼ tsp Nutmeg
¼ tsp Cinnamon
¼ tsp Ginger
½ tsp Lemon rind – grated
  Assortment of fruit

Cube an assortment of fruits and arrange on a skewer. I used strawberries, mangos and cantaloupe. Mix yogurt with spices and lemon rind and refrigerate for 15 minutes. Dip fruit in yogurt dip and enjoy!
